Apple & Fudge Mummy Pies

                          This recipe celebrates Autumnal flavours, creating a fun and tasty treat for the whole family to enjoy at Halloween. Delicious apples, sweet fudge and warm spices like cinnamon and nutmeg.
Ingredients
- 4 Bramley Apples
 - 40g Butter Unsalted
 - ½ Cup Soft Brown Sugar
 - ½ Cup caster sugar (plus extra for sprinkling)
 - ½ tsp Salt
 - 2 tsp Ground Cinnamon
 - ½ tsp Vanilla Extract
 - ½ Orange Zest
 - ¼ tsp Nutmeg
 - 1 tbsp Corn starch
 - 1 Jus-Rol Puff Pastry
 - 1 Jus-Rol Short Crust Pastry
 - 100g Fudge Chunks
 - Edible Eyes
 - 1 Egg (Optional for brushing)
 - Icing Sugar (for dusting)
 
Equipment required

 - Apple Peeler / Corer
 - Saucepan
 - Scales
 - Measuring Cups / Spoons
 - Rolling Pin
 - Zester / Grater
 - Baking Tray
 
Method
- Peel and chop the apples into bite sized chunks and melt butter over a medium heat. Add in apples and cook for 2-3 minutes. Add in the sugar and salt, stirring through for 5-10 minutes until the sugar has fully melted and the apples have slightly softened. Add in the vanilla, cinnamon, nutmeg and orange zest and cook for another 2 minutes.
 - In a separate bowl, add the cornflour and a tbsp of water and mix into a paste. Add this into the apple mixture and cook for 1-2 minutes until the sauce has thickened slightly. Stir in half the fudge chunks and allow the mixture to cool.
 - Preheat oven to 200c and roll out your Jus Rol Short Crust Pastry. Slice into even rectangles. Roll out Jus Rol Puff Pastry and slice into straight rough strips.
 - Add 2 spoonfuls of the apple mixture into the center of the pastry rectangles and add on more fudge chunks.
 - Layer the puff pastry strips roughly to make your wrapped mummie effect, pinching slightly at the edges.
 - Optional (Brush with egg) Bake in the oven approx 15-20 minutes until lightly golden brown on top. Finish by adding the eyes once cooled. Sprinkle with icing sugar to turn mummy’s white.
 
Tips
- Oven temperatures vary. Bake for 10 minutes and keep checking every couple of minutes.
 - Add eyes once pastries are fully cooled otherwise they will melt.
