Cherry and Plum Mini Lattice Pies

These cherry and plum lattice pies are the perfect way to celebrate British Pie Week—sweet, tangy, and wrapped in golden, flaky pastry. The rich, jammy filling pairs beautifully with the crisp lattice topping, making them an irresistible treat.


Ingredients

  • Small check mark in a circle icon Half a punnet of cherries, pitted and diced
  • Small check mark in a circle icon 3 Plums, pitted and diced
  • Small check mark in a circle icon 1/2 Tbsp vanilla extract
  • Small check mark in a circle icon 1 Tsp almond extract
  • Small check mark in a circle icon Pinch of salt
  • Small check mark in a circle icon 1-2x Jus-Rol puff pastry - you made need 2 depending on your muffin tin size
  • Small check mark in a circle icon Egg wash or soya milk, to brush
  • Small check mark in a circle icon Demerara sugar, to sprinkle
Equipment required
  • Muffin tin
  • Chopping board
  • Knife
  • Pastry brush

Method

  1. Preheat the oven to 220C
  2. Mix together your diced cherries and plums, vanilla and almond extracts, and salt to form the filling
  3. Cut 8 circles from your Jus-Rol pastry
  4. Cut the leftover pastry into strips, for the lattice top
  5. Press the circles of pastry into each hole of a muffin tin, pressing the sides to fit snuggly
  6. Spoon your cherry plum mixture into each pie
  7. Cover with the lattice strips however you wish
  8. Bake for 12 minutes until golden brown
  9. Leave to cool completely before removing from the tin
