Preheat oven to 220ºC (200 ºC for fan assisted ovens) 425ºF, Gas Mark 7

  1. Halve the peaches, remove stones and cut each half into 6-8 slices.
  2. Lay the pastry rounds on a lined baking sheet and top each with the slices of one peach, laid in a ring formation, leaving a border all round. Sprinkle with a little sugar.
  3. Brush borders with beaten egg and bake for 12 – 15 minutes until pastry is risen and golden. If desired sprinkle with a little extra sugar on removal from oven.
