Keep it simple with this recipe for leek, brie, mushroom and olive puff tart – made with Jus-Rol’s ready rolled puff pastry sheets, it’s perfect for lunch.


Ingredients

  • Small check mark in a circle icon 1 Jus-Rol™ Puff pastry ready rolled sheet
  • Small check mark in a circle icon 4tbsp tomato puree spread
  • Small check mark in a circle icon 100g leeks sliced & lightly sautéed or blanched
  • Small check mark in a circle icon 1/2 green pepper sliced
  • Small check mark in a circle icon 16 black olives
  • Small check mark in a circle icon 50g button mushrooms sliced
  • Small check mark in a circle icon 75g brie cut into chunks
  • Small check mark in a circle icon Seasoning
Equipment required

Method

  1. Preheat oven to 220°C/(200°C for fan assisted ovens)/Gas 7.
  2. Cut pastry sheets in half across length and place onto a lined baking sheet.
  3. Spread puree leaving a 2 cm border around the edges for the pastry to puff up.
  4. Top with remaining ingredients and season.
  5. Bake for 12-15 minutes until the pastry has risen and is golden.
