Spinach, Sweet Potato & Feta Sausage Rolls

Try these deliciously irresistible, sweet and lightly spiced flakey sausage rolls. Made with gluten free JusRol pastry and ready in an hour.
Ingredients
- 2 x packets gluten free JusRol puff pastry
- 2 large sweet potatoes
- 2 small red onions
- 1 red chili (optional)
- 150g canned chickpeas
- 100g feta
- 2 tbsp olive oil
- 50g spinach
- 1 tbsp mild curry powder
- 1 tsp garlic powder
- ½ tsp nutmeg
- 2 tsp dried chives
- Pinch of salt & pepper
- 1 egg for egg wash
- 2 tsp sesame seeds for topping

- Baking Tray
- Greaseproof paper
- Knife
- Pastry Brush
- Wire cooling rack
- Fork or potato masher
- Mixing bowl
Techniques Used
Method
- Preheat the oven to 180c (fan oven).
- Peel and wash your sweet potatoes. Cut the sweet potato and red onion into small cubed pieces and add to a lined baking tray. Cook this at 180c for 20 minutes.
- Remove the sweet potato and onion from the oven and transfer to a bowl. Mash the mixture until there are no large chunks. Add your chickpeas, chopped chilli and chopped spinach and continue to mash to mixture. Add in the feta, olive oil and spices and mix well.
- Unroll the pastry and cut the pastry down the middle length ways.
- Divide the sweet potato mixture into four. Press each fourth down the middle of each length of pastry into a sausage-like shape.
- Roll the pastry around the mixture and press the edges together to seal the sausage roll.
- Cut each length into four equal pieces and add to a lined baking tray. Score the top of the pastry. Brush the egg over the pastry then add a light sprinkle of sesame seeds. Bake for 20-25 minutes until golden brown and cooked through.
- Leave the sausage rolls on a wire cooling rack for 10 minutes before serving.
