Spinach, Sweet Potato & Feta Sausage Rolls

Try these deliciously irresistible, sweet and lightly spiced flakey sausage rolls. Made with gluten free JusRol pastry and ready in an hour.


Ingredients

  • Small check mark in a circle icon 2 x packets gluten free JusRol puff pastry
  • Small check mark in a circle icon 2 large sweet potatoes
  • Small check mark in a circle icon 2 small red onions
  • Small check mark in a circle icon 1 red chili (optional)
  • Small check mark in a circle icon 150g canned chickpeas
  • Small check mark in a circle icon 100g feta
  • Small check mark in a circle icon 2 tbsp olive oil
  • Small check mark in a circle icon 50g spinach
  • Small check mark in a circle icon 1 tbsp mild curry powder
  • Small check mark in a circle icon 1 tsp garlic powder
  • Small check mark in a circle icon ½ tsp nutmeg
  • Small check mark in a circle icon 2 tsp dried chives
  • Small check mark in a circle icon Pinch of salt & pepper
  • Small check mark in a circle icon 1 egg for egg wash
  • Small check mark in a circle icon 2 tsp sesame seeds for topping
Equipment required
  • Baking Tray
  • Greaseproof paper
  • Knife
  • Pastry Brush
  • Wire cooling rack
  • Fork or potato masher
  • Mixing bowl

Method

  1. Preheat the oven to 180c (fan oven).
  2. Peel and wash your sweet potatoes. Cut the sweet potato and red onion into small cubed pieces and add to a lined baking tray. Cook this at 180c for 20 minutes.
  3. Remove the sweet potato and onion from the oven and transfer to a bowl. Mash the mixture until there are no large chunks. Add your chickpeas, chopped chilli and chopped spinach and continue to mash to mixture. Add in the feta, olive oil and spices and mix well.
  4. Unroll the pastry and cut the pastry down the middle length ways.
  5. Divide the sweet potato mixture into four. Press each fourth down the middle of each length of pastry into a sausage-like shape.
  6. Roll the pastry around the mixture and press the edges together to seal the sausage roll.
  7. Cut each length into four equal pieces and add to a lined baking tray. Score the top of the pastry. Brush the egg over the pastry then add a light sprinkle of sesame seeds. Bake for 20-25 minutes until golden brown and cooked through.
  8. Leave the sausage rolls on a wire cooling rack for 10 minutes before serving.
